    Shaft’s Cheese Company has brought back the unique art of aging cheese. The once thought  lost art of aging and producing a quality bleu cheese in these times of mass production has been  reborn with Shaft’s Bleu Vein Cheese.

    Bleu cheese originally came about thousands of years ago when cheese was aged in caves where mold was naturally present.  The unique nutrients that the molds produced help create a distinct flavor, texture and blue-green color of mold within the cheese.  It is important to note that when the mold was detected, many observers believed that the cheese was ruined and was often thrown out.  However, it was discovered that the molds help create a rich robust flavor that is now associated with bleu vein cheese.

    The aging process starts with the finest bleu cheese from a selected manufacturer in Wisconsin.  Then it is perfectly aged for at least one year and a  hands on involvement in every aspect of the aging and packaging process provides consumers with the finest bleu cheese available.

    We are now offering Ellie’s Vintage.  A superb two year old aged cheese that has taken a great bleu cheese and made it even better!
