
Early Autumn Salad

When going from summer to autumn, sometimes it's hard to choose what season to cook for! With this autumn salad, you don't have to choose. A simple change in produce (grilled peaches to apples) takes this from summer to fall in a snap. We love the fresh, simple ingredients that come together to create something amazing. The best way to make this salad shine is to use the limited-release, 3-Year Velvet Blue - only available through October 10th, 2023!
Ingredients:

Arugula
-
Shaft's 3-Year Velvet Blue

Peaches or Apples
-
Walnuts
-
Red onion
-
Your favorite balsamic vinaigrette
Steps:

If using peaches:

Preheat grill or stovetop to high.

Halve and de-pit peaches. Brush lightly with oil

Grill for 3-5 minutes on each side or until slightly charred.

Remove and slice into wedges

If using apples: simply cut apples into wedges

Roughly chop walnuts and dice red onion

Assemble salad by tossing arugula with balsamic vinaigrette. Add grilled peaches and/or apples, Shaft's 3-Year Velvet Blue cheese crumbles, walnuts and red onion.

To make this a well-balanced meal - add grilled, balsamic chicken.
