Early Autumn Salad


When going from summer to autumn, sometimes it's hard to choose what season to cook for! With this autumn salad, you don't have to choose. A simple change in produce (grilled peaches to apples) takes this from summer to fall in a snap.  We love the fresh, simple ingredients that come together to create something amazing. The best way to make this salad shine is to use the limited-release, 3-Year Velvet Blue - only available through October 10th, 2023!


  • Arugula

  • Shaft's 3-Year Velvet Blue

  • Peaches or Apples

  • Walnuts

  • Red onion

  • Your favorite balsamic vinaigrette



  1. If using peaches:

    1. Preheat grill or stovetop to high.

    2. Halve and de-pit peaches. Brush lightly with oil

    3. Grill for 3-5 minutes on each side or until slightly charred.

    4. Remove and slice into wedges

  2. If using apples: simply cut apples into wedges

  3. Roughly chop walnuts and dice red onion

  4. Assemble salad by tossing arugula with balsamic vinaigrette. Add grilled peaches and/or apples, Shaft's 3-Year Velvet Blue cheese crumbles, walnuts and red onion.

  5. To make this a well-balanced meal - add grilled, balsamic chicken.
