How are your cheeses shipped?

Shaft’s Cheese & Co. ships all packages with insulated liners and ice packs to ensure that your cheese stays cool in transit.  If your cheese is briefly above refrigeration temperatures don’t be alarmed!  Aged cheese ages for weeks/months/years at cave temperature, around 55 degrees Fahrenheit.

We ship all packages with Signature Release, so your package will be left at your door if you are not available to receive it.  Because cheese is a perishable item, we advise making sure someone will be available to receive the shipment.

All Shaft's Cheese products are individually vacuum sealed to preserve freshness and will stay fresh in your refrigerator for a minimum of 6 months.

How should my cheese look and smell upon arrival?

Cheese is a living product, and depending on the variety, cheeses have a wide range of textures, flavors, and aromas. It is not atypical for your package to have a strong smell upon arrival. This smell should dissipate slowly once the package has been opened. Cheese produces ammonia as a byproduct during aging, and even a short trip in a confined space can amplify that (and other!) aromas.

More often than not with regards to smell, the bark is worse than the bite! Just because a cheese smells strong does not always mean that it will taste strong. Let your taste buds be your guide - try a bit and see what you think!
