Caramelized Shallot and Blue Cheese Dip

Do you have some of those friends who don't like blue cheese and you can't help but think, "come on, grow up and sophisticate your palate a bit"? Don't worry, we all do! And this is the perfect recipe to start bringing your friends on the blue cheese bandwagon. Just like all those Swifties rooting for the Chiefs (yeah, we said it). So once you start sophisticating your friends and their taste buds, you can offer them our other super snackable Super Bowl dips. Pair them with Firehook crackers and you have an amazing spread that will bring all the sophistication without the extra work. 


Ingredients

  • 6 oz. Shaft’s 2-Year Blue Cheese

  • 3 tbs. Unsalted Butter

  • 1.5 cups Sliced Shallots

  • Pinch of sugar

  • 3/4 cup Mayo

  • 3/4 cup Sour Cream

  • Salt and Pepper to taste

  • Firehook Everything Crackers


Instructions

  1. Heat a medium skillet and melt butter.

  2. Add shallots and sugar, cooking slowly until the shallots soften and turn golden. Remove from heat.

  3. Mix remaining ingredients, breaking up any large bits of blue cheese. Add cooled shallots.

  4. Cover and refrigerate for at least 2 hours.

  5. Serve with Firehook Everything Crackers!
